Brussels Sprout and Sultana Coleslaw
You will need
6 Brussels sprouts * 1/2 small onion * 1 heaped tbsp sultanas * 2 tbsp orange juice * 1 tsp finely grated ginger
Soak the sultanas in the orange juice and ginger for at least 2 hours. Wash and trim the sprouts and finely slice. Peel and finely dice the onion. Stir the sultanas into the sprouts and onions and serve.
The coleslaw will keep in the fridge in an airtight container for 2 days.
