Courgette & Lentil Soup
This soup is very filling and has a lovely texture along with a beautiful pale green colour.
It is very simple to make as all the ingredients go into the pan together. You can either leave the soup chunky or blend it to get the smooth texture and green colour.
You will need
* 1 large courgette * 2 large leeks * 1 medium onion * 1 cup red lentils * 2 tsp vegetable stock powder * 1 tsp paprika * 1 tsp coriander
Wash and chop the leeks, courgette and onion into small pieces
and place in a large pan.
Add the stock powder, paprika and ground coriander to the pan and pour boiling water into the pan until the vegetables are covered.
Bring to the boil and then reduce to simmer for 20 minutes.
Allow to cool a little and then liquidise.
Return the soup to the pan and reheat gently.
Serve with a garnish of fresh parsley.
