Crown Prince Winter Warmer
Serves four
This dish is delicately flavoured for those who do not like strong spices, it is therefore suitable for children who would like to try warmer spices without having a curry. If you prefer a spicier dish then double the quantities of spices or add a little chilli or medium curry powder.
You will need
* 375g crown prince squash * 1 red onion * 1 small leek * 1 carrot * 4 tomatoes * 1 large can kidney beans * 1 tsp ground coriander * 1/2 tsp cumin * 1/2 tsp turmeric * 225ml vegetable stock * 1 level tbsp flour *
* 1 tbsp vegetable oil * salt and pepper *
Carefully cut two large slice of squash, remove the skin and seeds and cut into cubes. Cut the carrots into cubes and the tomatoes into quarters.
Peel and chop the onion and thinly slice the leek. Heat the oil in a large saucepan and gently fry the onion and leek, do not allow it to brown. Add the spices to the pan and heat gently with the onions and leeks. Add the carrots and squash to the pan and pour in the vegetable stock. Bring to the boil and then reduce to simmer for 20 minutes. Rinse and drain the kidney beans. Mix the flour with 1 tbsp of water, this can be rice or tapioca flour for those who may be gluten intolerant. When the vegetables are soft then add the flour and water mix to the pan to thicken the remaining juice. Season to taste with salt and pepper. Stir in the beans and heat gently for 2-3 minutes. Serve with rice.
