Sweet and Sour Sprouts
You will need
400-500gms Brussels sprouts * 2 dessert apples * 1 small onion *2 tbsp vegetable oil * 2 tbsp honey * 2 tbsp apple cider vinegar * salt and pepper * a small handful of toasted flaked almonds *
Lightly toast the flaked almonds under a grill or in a pan. Trim the sprouts, wash and cut in half. Peel and finely slice the onion. Wash, peel and core the apples then dice. Gently heat the oil in a large frying pan and add the sprouts, onions and apple, stir to distribute the oil. Gently fry for 2 -3 minutes or until the onion is soft. Add 3 - 4 tbsp of water to the pan so as to create a little steam, place a lid on the pan and steam for 5 minutes. Remove the lid and continue to cook until the juice has evaporated, this will not take long. Mix the honey and vinegar together in a jug or cup and then pour over the sprouts, apple and onion. Stir well so that all the ingredients get a coating, season with salt and pepper and sprinkle on the toasted almonds. Serve immediately with meat or fish.
