Brussels Sprout and Grape Salsa

 

All you need for this recipe are some

 brussels sprouts, white grapes, olive or walnut oil and balsamic vinegar.

 

Wash and trim 5-6 brussels sprouts and finely slice. If you are using larger sprouts then remove the core before slicing. Wash a dozen large white grapes and cut into quarters. Place the sprouts and the grapes into a bowl. Pour 1tbsp of oil and 1 tsp of vinegar over the sprouts and grapes and mix well. You may prefer to use more dressing by adding 11/2 tbsp oil and

11/2 tsp vinegar instead.

This salsa goes really well with a vegetable risotto.
